Vegetable Pizzas

  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup mayonnaise
  • 2 tablespoon basil pesto
  • 2 tablespoon olive oil
  • 1 tablespoon fresh basil
  • 1 tablespoon fresh oregano
  • 1 cup shredded mozzarella cheese
  • 1 medium tomato
  • 4 medium tortillas
  • 1 small zucchini
  • 1 small summer squash
  • 1 large sweet red pepper


    1. Quarter lengthwise the zucchini, squash, and sweet pepper. Brush zucchini, summer squash, and sweet pepper with oil; sprinkle with pepper and salt. Grill vegetables on uncovered grill directly over medium heat, turning once halfway through grilling. Allow 8 to 10 minutes for sweet pepper and 5 to 6 minutes for zucchini and summer squash. Remove vegetables from grill.
    2. Chop grilled vegetables. In a medium bowl combine chopped vegetables, tomato, mayonnaise, pesto, basil, and oregano.
    3. Place tortillas on grill rack directly over heat. Cover and grill for 1 to 2 minutes or until lightly toasted on one side.
    4. Turn tortillas over and spread the vegetable mixture over the toasted sides of tortillas. Sprinkle with shredded cheese. Cover and grill for 2 or 3 more minutes or until tortillas are lightly toasted, vegetables are just heated, and cheese begins to melt. Carefully remove from grill.
