Cashew Pork and Pea Pods

  • 2 cup pea pods
  • 2 count peaches
  • 1/2 cup cashews
  • 2 cup rice
  • 1 tablespoon oil
  • 1 teaspoon fresh ginger
  • 1 tablespoon cornstarch
  • 1/2 cup orange marmalade
  • 2 tablespoon soy sauce
  • 1/2 cup orange juice
  • 1 pound pork lean boneless


    1. Trim fat from meat. Thinly slice meat across the grain into bite-size strips.
    2. For sauce, in a bowl stir together orange juice, marmalade, soy sauce, cornstarch, and ginger. Set aside.
    3. Pour oil into a wok or large skillet. Preheat over medium-high heat.
    4. Add half of the pork. Cook and stir for 2 to 3 minutes or until juices run clear; remove from pan. Add remaining pork; cook and stir for 2 to 3 minutes.
    5. Return all meat to wok. Stir in pea pods and fruit. Push ingredients from center of wok.
    6. Stir sauce; pour into center of wok. Cook and stir sauce until thick and bubbly. Stir in meat mixture to coat with sauce. Cook and stir for 2 minutes. Stir in nuts. Serve with rice.
