Parmesan Chicken with Sun Dried Tomatoes

  • 1 teaspoon Italian herbs
  • 1 tablespoon Parmesan cheese
  • 1 teaspoon basil
  • 2 tablespoon bread crumbs
  • 1 teaspoon garlic salt
  • 1 teaspoon oregano
  • 4 count chicken breasts
  • 1 count cayenne pepper
  • 2 count sun dried tomatoes
  • 1/2 cup mayonnaise
  • 1/4 cup Parmesan cheese


    1. Preheat oven to 425 degrees.
    2. Add Parmesan to mayonnaise in bowl. Add pinch of cayenne to taste. Add Italian herbs and basil.
    3. Mince tomatoes finely. Add to mayo mixture and check for flavor.
    4. In another bowl mix bread crumbs with Parmesan cheese, oregano and generous amount of garlic salt.
    5. Place chicken in oven dish. Spoon mayonnaise mixture on top of each chicken breast and then sprinkle bread crumb mix on top of mayonnaise mixture.
    6. Bake for 20 to 25 minutes.
