Tortellini Minestrone

Ingredients

  • 6 cup beef broth
  • 3/8 cup shredded Parmesan cheese
  • 1 1/2 pound Italian sausage
  • 1 cup onion
  • 1/2 cup wine red
  • 1 can tomatoes
  • 2 cup carrots
  • 1 cup celery
  • 1/4 cup ketchup
  • 1 teaspoon Italian seasoning
  • 2 cup zucchini
  • 1/2 pound cheese filled tortellini
  • 1/4 cup parsley
  • 2 count garlic
  • 1 medium green pepper

Directions

    1. In 5 quart Dutch oven, brown sausage; drain excess fat.
    2. Add broth and onion, garlic, wine, tomatoes, carrots, celery, ketchup and Italian seasoning. Bring to boil, simmer uncovered, for 30 minutes. Skim any fat from the soup.
    3. Stir in zucchini, tortellini, green pepper, and parsley. Simmer covered until pasta is tender about 30 minutes.
    4. Sprinkle with Parmesan cheese before serving, if desired.
