Farfalle with Fresh Tomatoes and Basil

Ingredients

  • 2 clove garlic
  • 1 tablespoon olive oil
  • 12 ounce farfelle
  • 1/4 teaspoon pepper
  • 1 pound tomatoes Roma
  • 1 cup fresh basil
  • 1/4 teaspoon salt
  • 1/4 cup grated Parmesan cheese

Directions

    1. Bring 4 quarts water to boil in a 6 to 8 quart pan. Add pasta and cook just until tender to bite (7 to 9 minutes); or cook according to package directions.
    2. Meanwhile, heat oil in a wide frying pan over medium heat. Add garlic and cook, stirring, for 1 minute. Add tomatoes and cook, stirring, just until tomatoes begin to soften (about 3 more minutes). Remove from heat.
    3. Drain pasta and place in a warm wide bowl or on a deep platter. Add tomato mixture and basil; mix well.
    4. Season to taste with salt and pepper; garnish with cheese.
