Lemon Linguini

Wonderful summertime pasta dish. Delicious with grilled shrimp


  • 1 cup Parmesan cheese
  • 1/4 cup butter
  • 1/4 cup oil
  • 1/2 cup green onions
  • 1/4 cup fresh parsley
  • 2 count lemons
  • 1 count salt and pepper
  • 1 pound linguini


    1. Cook linguini in boiling salted water till done; drain well.
    2. Zest the skin of one lemon. Juice both lemons.
    3. Combine with the pasta all ingredients except the salt, pepper and cheese in a large serving bowl. Stir well.
    4. Sprinkle salt and freshly ground pepper over pasta, toss in parmesan cheese to taste. Serve hot or cold.
