  • Ready Time: 45 Min
  • Servings: 4 servings

  • 1 pound green beans fresh
  • 1 large onion
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • 2 clove garlic
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

    1. Preheat oven to 400 degrees.
    2. Spray a 13 x 9 inch (or larger) baking pan with cooking oil spray. Rinse the green beans and trim off the tough ends. Place them in the pan.
    3. Peel the onion and cut it into slices about 1/4 inch wide. Separate the rings and scatter them over the beans. Peel the garlic. Cut the cloves in half. Scatter them over the onions.
    4. Drizzle the oil over the vegetables. Sprinkle lightly with salt and pepper.
    5. Bake the vegetables, uncovered, for about 30 minutes, opening the oven every 10 minutes to stir briefly. On the second stir, taste 1 bean and adjust the remaining cooking time to personal preference.
    6. Remove the beans from the oven, and then transfer them to a serving bowl. Drizzle the vinegar over the bean mixture, stir well. The beans also can be served hot or at room temperature.
