Ingredients

  • 1 can black beans
  • 1 can black olives chopped
  • 1 small onion
  • 1 clove garlic
  • 2 tablespoon vegetable oil
  • 2 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon pepper
  • 8 ounce cream cheese
  • 2 count eggs
  • 1 count green onion

Directions

    1. Combine all ingredients except eggs, cream cheese, and green onion in a bowl. Refrigerate for 2 hours.
    2. Spread an even layer of softened cream cheese on a serving plate.
    3. Spoon black bean mixture evenly over the plate of cream cheese.
    4. Arrange chopped, hard cooked eggs, in a ring on top of the bean mix.
    5. Sprinkle with green onion.
    6. Serve with tortilla chips.
