Cranberry Bread

Ingredients

  • 1/4 cup orange juice
  • 1 cup sugar
  • 2 cup flour all purpose
  • 1 tablespoon orange rind
  • 3/8 teaspoon baking powder
  • 3/8 teaspoon baking soda
  • 3/8 teaspoon salt
  • 2 count eggs
  • 3 tablespoon butter
  • 1 cup chopped pecans
  • 1 cup cranberries

Directions

    1. Rinse and process (food processor is the best way to slice cranberries) the cranberries, set aside.
    2. Combine sugar and butter. Add eggs one at a time. Add orange juice and rind.
    3. Sift the first five ingredients (flour, sugar, powder, soda, salt) together. and add to mixture above.
    4. Fold in nuts and cranberries. Pour into loaf pan.
    5. Bake for 1 hour at 350 degrees
