Bruschetta with Mozzarella

  • 2 medium tomatoes
  • 8 slice Italian bread
  • 2 tablespoon olive oil
  • 1 clove garlic
  • 1 pinch ground black pepper
  • 1 cup shredded mozarella cheese
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 cup grated Parmesan cheese


    1. Preheat broiler.
    2. Core tomatoes and chop coarsely (makes about 2 cups). Place tomatoes in a medium bowl along with oil, garlic, oregano, salt and black pepper; set aside.
    3. Arrange bread slices on a large ungreased baking sheet; place under broiler until golden on both sides, turning once.
    4. Sprinkle mozzarella cheese over each slice of bread; then spoon equal amounts of tomato mixture over mozarella cheese. Sprinkle with parmesan cheese.
    5. Broil two to three inches from heat until cheese melts and starts to brown (about 1 to 2 minutes). Serve immediately.
