Holiday Eggnog

NOTE: One-half to 1 cup of light rum may be added before serving


  • 6 count eggs
  • 1/4 teaspoon salt
  • 1 cup whipping cream
  • 3 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon nutmeg
  • 1/2 cup sugar


    1. In a large saucepan, beat eggs, sugar and salt. Stir in milk. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon (about 15 minutes- thermometer should register 160 degrees). Remove from heat.
    2. Stir in vanilla and nutmeg. Cover and refrigerate until thoroughly chilled (several hours or overnight).
    3. Just before serving, beat whipping cream until soft peaks form. Using a wire whisk, gently fold whipped cream into chilled mixture.
