Beef Barley Soup

  • 1 can beans green cut
  • 1/2 teaspoon basil dried
  • 1/3 cup barley pearled quick cooking
  • 1 tablespoon sugar
  • 2 teaspoon salt
  • 1 count bay leaf
  • 1 medium onion
  • 1 cup carrot
  • 1 can tomatoes diced
  • 1 quart water
  • 2 pound beef short ribs lean
  • 1 can lima beans baby


    1. Drain green beans and lima beans, reserving liquid. Cover beans and refrigerate.
    2. In a large saucepan or dutch oven, combine liquid drained from beans with all remaining ingredients; mix well.
    3. Bring to a boil; then reduce heat, cover pot, and simmer for 2 hours or until meat is tender.
    4. Remove short ribs from soup and cool. Cut meat from bones and chop into bite size pieces. Add meat to soup. Discard bones. Skim off as much fat as possible from top of soup. Add green beans and lima beans to soup and heat for about 10 minutes.
