Old Fashioned Veggie Soup

  • 4 cup vegetables
  • 1 pound stew meat or round steak
  • 4 count celery
  • 1 large onion
  • 6 cup liquid any combo of tomato sauce bouillon V-8 juice or hot water
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/4 cup vegetable shortening
  • 3/8 cup barley pearled
  • 4 count beef short ribs


    1. Coarsely chop stew meat or round steak.
    2. Heat shortening or oil in a large pot or Dutch oven. Add stew meat or round steak and short ribs; cook until meat is browned on all sides.
    3. Add celery, onion and liquid; bring to a boil. Reduce heat and simmer on low for about 2 hours.
    4. Remove short ribs and allow to cool. Cut meat from bones and add to soup. Discard bones. Add vegetables and cook until tender (about 45 minutes)
    5. Add barley and cook for about 1 hour longer, stirring frequently.
