Black Bean Chili

  • 1 teaspoon salt
  • 2 teaspoon ground cumin
  • 1 tablespoon oregano
  • 2 clove garlic
  • 1 medium onion
  • 1 can tomatoes crushed
  • 2 can black beans 15 oz
  • 1 count shredded monterey jack cheese
  • 1/4 cup vegetable oil
  • 4 tablespoon chili powder
  • 1 cup water
  • 3 cup chicken breast cooked


    1. Heat oil in a large skillet or Dutch oven over medium heat. Add onion, garlic, chili powder, oregano, cumin and salt; saute for 5 minutes or until onion is tender.
    2. Stir in chicken or turkey, tomatoes, and 1/2 cup water. Simmer uncovered for 15 minutes, adding more water if needed.
    3. Stir in beans; cook 15 minutes longer or until slightly thickened.
    4. Serve chili topped with shredded cheese, chopped onion, and a dollop of sour cream, if desired.
