Creole Sole

  • 1/2 teaspoon lemon herb seasoning
  • 2 teaspoon butter or margarine
  • 1 can tomato sauce
  • 2 tablespoon water
  • 1 pound sole fillets
  • 2 cup rice cooked
  • 1 cup green onions
  • 1 cup green pepper


    1. Preheat oven to 375 degrees.
    2. In a skillet over medium heat, saute onions and green pepper in butter or margarine until tender but not brown.
    3. Blend in tomato sauce, water and lemon-herb seasoning. Cover pan, reduce heat, and simmer for 5 minutes.
    4. Arrange fish fillets in a shallow baking dish. Spoon sauce over fillets.
    5. Bake uncovered at 375 degrees for 15 minutes or until fish flakes easily when tested with a fork. Serve with hot rice.
