Tropical Shrimp

Note: If using large shrimp


  • 1 pound shrimp
  • 3 tablespoon soy sauce
  • 1/2 count sweet red pepper
  • 2 cup pineapple chunks
  • 1 can water chestnuts
  • 3/4 cup pineapple juice
  • 3/4 cup water
  • 3/8 cup lemon juice
  • 3/8 cup light brown sugar
  • 1/8 teaspoon ground ginger
  • 1/2 count green pepper


    1. Drain pineapple chunks and water chestnuts. Cut peppers into chunks and slice water chestnuts.
    2. Peel and devein shrimp.
    3. In a large skillet, combine pineapple juice, water, lemon juice, brown sugar, cornstarch, soy sauce and ginger; cook over medium heat, stirring constantly, until mixture is thick and clear (about 4 to 6 minutes).
    4. Add shrimp and cook for 3 minutes.
    5. Add pineapple chunks, water chestnuts, green pepper and red pepper; heat thoroughly (about 3 to 5 minutes).
    6. Serve with cooked rice.
