Lentil Soup

Ingredients

  • 2 tablespoon vinegar
  • 9 cup water
  • 2 cup lentils
  • 1 count ham bone
  • 1/2 pound bacon
  • 3/4 cup onion
  • 3/4 cup celery
  • 1/2 cup carrots
  • 1/2 cup leeks
  • 1 clove garlic
  • 1 count bay leaf
  • 1/2 teaspoon thyme
  • 2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

    1. Combine lentils and water with the ham bone in a large pot. Bring to a boil, reduce heat, and simmer for 45 minutes, stirring occasionally.
    2. Saute bacon in a skillet until it is transparent but has not changed color.
    3. Add onion, celery, carrots, leeks, garlic, bay leaf, thyme, salt and pepper. Cook and stir for 4 minutes.
    4. Add to lentils and simmer 45 minutes, stirring occasionally.
    5. Add vinegar, bring to a simmer, and remove from heat.
