Hollandaise Sauce

  • 1/2 cup butter
  • 1 pinch cayenne pepper
  • 1/4 teaspoon mustard dry
  • 3 count egg yolks
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt


    1. Heat butter to bubbling in a small pan. Careful: do not burn.
    2. Put all remaining ingredients in a blender, cover, and blend on low speed.
    3. With blender still running, remove cover and add butter in a steady stream.
    4. Serve immediately.
    5. Yield: 1 cup Hollandaise.
