Shrimp Newburg

  • 4 small puff pastry shells
  • 1 cup cream
  • 3 count egg yolks
  • 1 pinch nutmeg
  • 1/2 teaspoon paprika
  • 1/4 cup sherry dry
  • 2 cup shrimp
  • 4 tablespoon butter


    1. Preheat and bake pastry shells according to package instructions.
    2. Meanwhile, in a saucepan or double boiler, melt butter and stir in shellfish. Cook for about 3 minutes. Do not overcook.
    3. Add sherry and cook for 2 more minutes. Add paprika and nutmeg.
    4. Over medium heat, add egg yolks, and cream. Stir constantly until liquid thickens.
    5. Add salt and pepper to taste and fill pastry shells.
