Shrimp Mornay

This can be made ahead of time.


  • 1 pound shrimp
  • 8 ounce rice or pasta dry
  • 2 tablespoon butter
  • 2 tablespoon flour
  • 3/8 cup cream
  • 1 cup chicken broth
  • 1/4 cup shredded swiss cheese
  • 1/4 cup grated Parmesan cheese


    1. Prepare the shrimp and set aside.
    2. Melt butter over medium heat in a large sauce pan and add flour. When bubbling, stir in cream.
    3. Add chicken broth and slowly stir in swiss cheese.
    4. When thick, add shrimp.
    5. Pour into individual ramekins or a baking dish, sprinkle with parmesan cheese, and broil 4 inches from heat until lightly browned.
    6. Serve with or over rice or pasta, prepared according to pkg. instructions.
