Bacon Scallion Puffs

Ingredients

  • 5 slice bacon
  • 1 cup cheddar cheese
  • 2 count eggs
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1 tablespoon lemon juice
  • 1 cup water
  • 1 count apple

Directions

    1. Soak apple slices in 1 c. water and lemon juice and set aside. Cooked bacon ahead and get all ingredients measured and ready to use.
    2. Combine 1/2 c. water, butter and salt in a medium saucepan. Bring to boil;reduce heat and stir in flour. Cook until the mixture pulls away from the side of the pan, beating constantly. Remove from heat and add eggs, one at a time, beating with a wooden spoon until mixture becomes a consistent mass.
    3. Add cheese, bacon, and scallions and stir again. Season with the salt and pepper.
    4. Pipe or scoop dough into puffs and place on a baking sheet that has been covered with parchment paper. Bake in an oven at 425 degrees F, for 15-20 minutes or until golden brown.
    5. Drain the apples and pat dry. Cut puffs in half and place apple slices in the center of the puff.
