Grilled Chicken Fajitas

Great with tortillas or served on a bed of lettuce. Fajita seasoning can be purchased in a bottle or packet but you can also make your own by mixing equal parts of cumin


  • 1/4 cup cilantro
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoon fajita seasoning
  • 1 count sweet onion
  • 1 count pepper red
  • 1 count pepper yellow
  • 3 count chicken breasts


    1. Julienne cut the chicken breasts, afterwards sprinkle with the fajitas seasoning and set aside.
    2. Julienne cut the peppers and the onion. Set aside.
    3. Using a grilling skillet or mesh bowl sprayed with cooking spray, sear chicken strips on hot grill until done.
    4. Add peppers, onion, and cilantro and cook with chicken. Gently toss as the vegetables cook. It is important to keep this moist, so if the chicken and vegetables start to look dry just add a sprinkle of water occasionally. Do not over cook the vegetables.
    5. Remove from heat and serve with tortillas and garnish with tomatoes, cheese, sour cream, and salsa. For a lighter fare, serve on a bed of lettuce with black beans and diced tomato.
