Cashew Chicken

  • Servings: 4 servings


  • 1 cup mushrooms
  • 3 count chicken breasts
  • 1/2 cup cashews
  • 2 cup rice
  • 1 cup peas
  • 1 small onion
  • 1 tablespoon curry powder
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoon oil


    1. Saute onion and mushrooms in oil until tender, just a couple of minutes. Add the cayenne pepper and curry and stir together.
    2. Thaw the peas in water, drain and add to mixture. Add rice. If dry add a little water. Add chicken and cashews combining well and continue cooking for about 5 minutes.
    3. Serve and Enjoy!
