Lemon Garlic Green Beans

Cold green bean dish that serves as a side or a salad. Yummy!


  • 1 clove garlic
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 count lemon
  • 1 1/2 tablespoon olive oil
  • 2 pound green beans


    1. Clean green beans leaving them whole, do not snap but trim ends. Bring 4 quarts water to boil and add beans. Boil for about 8-10 minutes until slightly done. Be sure not to overcook. Rinse with cold water immediately and drain.
    2. In a large bowl combine the juice of the lemon (about 2 T.), oil, and garlic. Add green beans and gently toss. Add salt and fresh ground pepper. Chill for 1-2 hours before serving. This can be made the day before and chilled overnight.
