Gringo Enchiladas

  • 1 cup shredded cheese of your choice
  • 1 package flour tortillas
  • 1 can green chiles chopped
  • 1 can green chili sauce
  • 1 pint sour cream
  • 1 can soup cream of chicken
  • 1 can black olives
  • 1 can soup cream of mushroom
  • 6 count chicken breasts
  • 1 teaspoon cumin
  • 1/4 cup vinegar


    1. Preheat oven to 350 degrees.
    2. In a skillet cook the chicken breasts with the cumin and vinegar until chicken is done, about 15-20 minutes. Let cool briefly and then dice.
    3. Combine both cans of soup, black olives, sour cream, and green chilis. Add cooked, diced chicken.
    4. Spoon mixture onto flour tortillas; roll. Place in 9x13 baking dish. When done top casserole with green sauce and shredded cheese.
    5. Bake covered at 350 degrees for 30-40 minutes or until bubbling. Remove cover and cook for another 5-10 minutes until golden brown.
