Cranberry Squares

Ingredients

  • 3/8 cup brandy or orange juice
  • 2 cup white sugar
  • 4 cup fresh or frozen cranberries
  • 1 cup butter
  • 1 teaspoon baking powder
  • 1 1/2 cup oats rolled
  • 1 1/2 cup flour
  • 1 1/2 cup brown sugar

Directions

    1. To prepare the brandied cranberry sauce spread 4 cups of fresh or frozen cranberries out in a 9x13 inch baking dish and sprinkle with 2 cups of white sugar. Bake at 300 degrees for an hour. Remove from the oven and stir in 1/3 cup of brandy or orange juice. This yields about three cups. Only one cup will be needed for the cranberry squares.
    2. For the cranberry squares, preheat oven to 350 degrees.
    3. Mix first four ingredients well. Blend in softened butter until mixture is crumbly.
    4. Press two thirds of the oat mixture into the bottom of a 9" square pan. Top with cranberry sauce and sprinkle the remaining third of the oat mixture over the cranberries.
    5. Bake at 350 degrees for 30 minutes. Let them cool completely before cutting into squares.
