Ingredients

  • 2 count onions
  • 2 tablespoon olive oil
  • 2 pound beef soup meat
  • 1 cup zucchini
  • 1 cup green beans
  • 1 cup tomatoes
  • 1 cup carrots
  • 1 cup cabbage
  • 1 can garbanzo beans
  • 2 count garlic cloves
  • 1/2 cup fresh parsley
  • 1 tablespoon basil
  • 2 cup pasta tiny
  • 1 cup grated Parmesan cheese
  • 2 count celery

Directions

    1. In a heavy Dutch oven, saute the onions in olive oil until golden.
    2. Add garlic, meat, 3 1/2 quarts water, and celery. Cook covered over low heat for 2 to 3 hours, adding liquid as necessary.
    3. Add vegetables, beans, and parsley, cook for another hour or until beans and veggies are tender.
    4. Parboil the pasta for 6 minutes-drain and add to soup along with salt and pepper. Cook rapidly for 5 minutes, lower heat and cook another 10 minutes.
    5. Remove soup bone and meat. Cut meat from the bone and shred. Add meat back into soup. Sprinkle soup with Parmesan cheese.
