Mediterranean Vegetables

Ingredients

  • 1 pound mushrooms whole
  • 4 tablespoon vinegar Balsamic
  • 1 teaspoon thyme
  • 1/2 teaspoon pepper
  • 1 cup olive oil
  • 1 teaspoon salt
  • 2 count sweet potatoes
  • 2 count carrots
  • 2 count zucchini
  • 2 count squash yellow
  • 4 medium onions

Directions

    1. Mix oil, balsamic vinegar, and spices together, set aside. Cut up the vegetables in similar sizes.
    2. Toss veggies in balsamic/oil mixture.
    3. Heat oven to 450-500 degrees. Place potato, carrot, onion, and sweet potato in roasting pan. Bake 20-25 minutes.
    4. Add soft veggies and cook another 12-15 minutes or until desired doneness.
