Southwestern Bean Salad

Ingredients

  • 1 can kidney beans
  • 1 can black beans
  • 1 can garbanzo beans
  • 2 count celery
  • 1 medium onion red
  • 1 medium tomato
  • 1 cup corn frozen
  • 3/4 cup salsa
  • 1/4 cup vegetable oil
  • 1/4 cup lime juice
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin

Directions

    1. Rinse and drain beans. In a large bowl, combine beans, celery, onion, tomatoes, and corn.
    2. In a small bowl, combine dressing ingredients and mix well. (salsa, oil, lime juice, chili powder, and cumin)
    3. Pour dressing over bean mixture and toss to coat.
    4. Cover and chill for at least 2 hours.
