Ellies Diabetic Potato Salad

Ingredients

  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 tablespoon vinegar
  • 1/2 cup mayonnaise light
  • 1 cup nonfat sour cream
  • 4 count celery stalks
  • 1 tablespoon pickle relish
  • 1 medium onion
  • 3 count eggs
  • 6 large potatoes

Directions

    1. Mix sour cream, mayonnaise, vinegar, salt and pepper.
    2. Toss lightly with first five ingredients and chill overnight.
