Baked French Onion Soup

  • 1 cup Swiss cheese
  • 2 tablespoon butter
  • 6 slice bread French
  • 1 medium bay leaf
  • 1/2 teaspoon thyme
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 cup wine red
  • 2 can beef broth
  • 3 tablespoon flour
  • 2 clove garlic
  • 3 tablespoon olive oil
  • 4 large onions


    1. Begin with the onions, peel and slice them (1/4 inch slices). Heat olive oil and mince garlic in skillet, add onions and simmer until onions are softened. (about 30 minutes)
    2. Add bay leaf, thyme, salt and pepper. Sprinkle flour over cooked onions and whisk in the beef broth. Stirring continually until slightly thickened. Add red wine and continue to cook for about 30 minutes.
    3. In individual baking dishes place a thick slice of buttered french bread and pour soup over it. Sprinkle with cheese and bake for about 15 minutes or until golden brown in 400 degree oven.
