Veal Saltimbocca

  • 1 cup beef broth
  • 2 count eggs
  • 1/2 cup marsala wine
  • 4 ounce mushrooms
  • 1 tablespoon sage
  • 4 tablespoon butter
  • 1/4 cup milk
  • 1 cup bread crumbs
  • 1/2 cup flour
  • 4 count Prosciutto ham slices
  • 8 count Veal cutlets


    1. Place 1 slice of Prosciutto ham between two veal cutlets. Pound together with mallet.
    2. Dip in flour and seasonings, then in beaten egg and milk mixture, and then in bread crumbs.
    3. Saute in butter until brown on one side only. Place in baking dish browned side down and bake in 300 degree oven for 15 minutes or until golden brown.
    4. To make wine sauce take butter and make a roux without browning the butter and add broth, wine, flour, and mushrooms.
    5. Simmer 5 minutes and pour over veal and serve over spaghetti.
