Chicken in Garlic Cream Sauce

  • 6 count chicken breasts boneless skinless
  • 1/4 cup butter
  • 2 tablespoon oil canola
  • 1 cup wine white dry
  • 1/4 cup water
  • 1 pinch cayenne pepper
  • 1/4 cup milk
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 3 count egg yolks
  • 1 cup heavy cream
  • 15 count garlic cloves


    1. In a large skillet or dutch oven, melt butter over medium heat and add oil. Add chicken and brown. Remove and keep warm.
    2. Add garlic to the oil/butter and cook until golden. Add wine, water, milk, and cayenne. Bring to a boil.
    3. Return chicken to pan; cover, and cook on low heat until tender (about 20-30 minutes).
    4. Beat egg yolks into heavy cream until they are well mixed.
    5. Remove chicken to warm serving plate and cover with foil. Keep warm.
    6. Stir cream mixture into pan drippings and cook until thickened (dont let boil).
    7. Add some of the sauce to chicken and serve the rest separately. Serve with rice or pasta, if desired.
