Chicken Marsala

The juice from the chicken seasons rice well and makes a great side.


  • 1/4 cup flour
  • 1 teaspoon lemon juice
  • 6 count chicken breasts
  • 1 teaspoon parsley
  • 1/2 cup marsala wine
  • 6 tablespoon butter


    1. Pound chicken thin. Sprinkle chicken breasts with lemon juice. Dredge in flour and season with salt and pepper.
    2. Melt butter in heavy skillet and saute chicken 3 or 4 minutes on each side. Add marsala wine and simmer 10-12 more minutes or until chicken is completely done.
    3. Arrange chicken on heated platter and pour hot juices over. Garnish with parsley and lemon if desired.
