Tomato Pie

Tomatoes need to be at room temperature for this recipe.


  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 cup mayonnaise
  • 1/2 cup shredded sharp cheddar cheese
  • 1 cup mozzarella cheese shredded
  • 4 large tomatoes
  • 3/8 cup green onions
  • 8 count fresh basil leaves
  • 1 count pie shell deep dish


    1. Heat oven to 350 degrees.
    2. Peel and thinly slice the tomatoes. Chop the basil leaves.
    3. Layer the tomato slices, onion and basil in the prebaked pie shell. Salt and pepper the tomatoes.
    4. Mix the mayonnaise, cheddar and 1/2 c. mozzarella together and spread over tomatoes. Sprinkle with remaining mozzarella.
    5. Bake for 30 minutes or until brown on top.
