Mothers Lemon Cake Pie

Do not use deep dish pie crust.


  • 2 tablespoon butter
  • 1 count egg large
  • 3 tablespoon flour
  • 1 cup cream
  • 1 tablespoon lemon peel
  • 2 tablespoon lemon juice
  • 1 cup sugar
  • 1 count pastry shell


    1. Combine everything but the egg whites and the pie shell. Beat until fluffy. Then beat egg whites until fairly stiff.
    2. Fold egg white mixture until no white streaks show. Pour into pie shell and bake for 35-40 minutes at 350 degrees. The pie should look puffy and touched with brown.
