Shrimp and Grits

Ingredients

  • 1 cup half and half
  • 1 teaspoon salt
  • 1 cup grits
  • 1/4 cup Parmesan cheese
  • 1/2 cup cheddar cheese
  • 1 tablespoon butter
  • 1/2 teaspoon hot sauce
  • 1/4 teaspoon pepper
  • 3 slice bacon
  • 1 pound shrimp
  • 1/4 cup flour
  • 1 cup mushrooms
  • 3 count green onions
  • 1 1/2 cup chicken broth
  • 2 tablespoon lemon juice
  • 1 clove garlic
  • 2 cup water

Directions

    1. Combine water, 1 c. broth, half and half, and salt in saucepan and bring to a boil. Add grits and cook until done, about 10 minutes.
    2. Add cheeses, hot sauce, and butter combining all ingredients well.
    3. Fry bacon in skillet, drain, crumble, and set aside. Use 1 T. of bacon drippings for sauteing mushrooms until tender. Add garlic and green onions and saute for 2 minutes.
    4. Dredge shrimp in flour. Add to mushrooms, green onions, and garlic. Cook for about 2 more minutes. Add additional 1/2 c. broth and lemon juice. Bring to a boil.
    5. Put grits in 9x13" baking dish and pour shrimp mixture over. Bake for about 15-18 minutes at 350 degrees.
