Italian Cream Cake

Ingredients

  • 1/2 cup walnuts
  • 1 teaspoon almond extract
  • 1 ounce sugar Confectioners
  • 1 package cream cheese
  • 1 cup coconut angel flake
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 2 cup flour
  • 5 count eggs
  • 1/2 cup shortening
  • 1 cup butter
  • 1 1/2 cup sugar

Directions

    1. Cream 1/2 cup butter, sugar and shortening. Add egg yolks, one at a time, beating well.
    2. Alternately add flour and buttermilk; beat well. Add coconut.
    3. Beat egg whites until stiff and fold into batter.
    4. Bake in 4 8" cake pans for 25 to 35 minutes at 350 degrees. Prepare frosting while cakes bake.
    5. Cream the cheese and 1/2 cup butter together.
    6. Add confectioners sugar, almond extract, and nuts. Mix until smooth.
