Chicken in Phyllo Dough

This recipe can be frozen before baking. Be sure to thaw completely before baking. Make ahead and pull out when you need. Easy and good.


  • 1 teaspoon tarragon
  • 2 clove garlic
  • 1/4 cup lemon juice
  • 1 cup green onions
  • 1 cup mayonnaise
  • 3/8 cup shredded Parmesan cheese
  • 1/4 cup butter
  • 24 count Phyllo dough sheets
  • 12 count chicken breasts


    1. Salt and pepper chicken breasts. Flatten so they can be rolled. You can place individual chicken breast in zip locked bag and use a can or heavy object to flatten.
    2. Combine mayo, onions, lemon juice, garlic, and tarragon. Coat chicken breasts with mixture.
    3. Remove Phyllo dough from package and open sheets. Cover dough with moist paper towel until ready to use. Brush one sheet with melted butter and place another sheet on top and brush with butter also. Place a coated chicken breast on Phyllo sheet and roll up. Tucking sheet in around chicken. Place seam side down on a baking sheet. Do not allow rolled chicken breasts to touch.
    4. When all the chicken breasts are rolled brush with butter and sprinkle with Parmesan cheese. Bake at 350 degrees for about 55-60 minutes.
