Almond Chicken

  • 1 tablespoon orange marmalade
  • 1 package almonds sliced 2.25 oz
  • 6 count chicken breasts
  • 1 cup heavy cream
  • 1/4 cup butter
  • 1 tablespoon mustard dijon style


    1. Flatten chicken between two sheets of plastic wrap or a zip locked bag until 1/2 inch thick. Salt and pepper to taste.
    2. Toast almonds lightly.
    3. Pan fry chicken in butter on medium heat turning to brown each side for about 3 minutes per side.
    4. Reduce heat; add cream, marmalade, mustard. Sprinkle with almonds and continue to cook until chicken is fully cooked about 10 minutes.
    Almonds can be toasted in the oven or in a skillet.  Be careful not to burn them as they are full of oil!
