Grilled Eggplant

Ingredients

  • 1 count eggplant
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup olive oil

Directions

    1. Slice eggplant in 1/2 inch thick pieces and brush with olive oil.
    2. Sprinkle with salt, and pepper, and grill covered over medium high heat for about 5 minutes. Turn and grill other side.
