Salmon with Lemon Basil Butter

Ingredients

  • 1 count lemon zest only
  • 4 count salmon steaks 4 to 6 oz
  • 1 tablespoon fresh parsley
  • 2 tablespoon fresh basil
  • 1/4 cup butter

Directions

    1. Preheat oven to 400 degrees. Season salmon steaks with salt & pepper and place in a single layer on a greased, heatproof dish.
    2. Finely grate lemon zest and beat into the butter with the chopped basil and parsley. Spread the butter evenly over each salmon steak.
    3. Cover with aluminum foil and bake for 15 minutes, until the fish is tender.
    4. Place the salmon steaks on serving plates and spoon melted butter from the dish over the top. Serve with new potatoes and asparagus.
