Barbeque Chicken Pizza

  • 1/4 teaspoon salt
  • 1/4 cup Parmesan cheese
  • 1 can tomatoes petite diced
  • 1/4 cup barbeque sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 large chicken breast
  • 1 cup mozzarella cheese
  • 1 tablespoon cilantro
  • 1 tablespoon olive oil
  • 1 package yeast
  • 1 cup water
  • 2 1/2 cup flour
  • 1/4 cup oil
  • 1/4 cup corn meal
  • 1 small onions
  • 1 tablespoon basil
  • 1 teaspoon oregano
  • 2 clove garlic


    1. Dissolve yeast in warm water according to package instructions. Grease a large round baking sheet.
    2. Combine flour, oil, olive oil, and corn meal. Mix well; knead with dough hook for about 3 minutes. Remove dough from bowl to clean surface and let rise until double. This doesnt take long. You can prepare the other ingredients while it rises.
    3. Drain the tomatoes, squeeze the liquid out as best you can. Add basil, oregano, garlic (minced), salt, Parmesan cheese, and barbeque sauce. Set aside.
    4. Punch down the dough and spread it evenly over the greased baking pan
    5. Spread the tomato mixture on top of the dough and arrange diced chicken breast, thinly sliced onions, and 1 c. mozzarella cheese evenly over the top.
    6. Bake in 450 degree oven for 25 minutes or until done.
