Cream of Tomato Basil Soup

Salt my vary in this recipe...some tomatoes and broths are low sodium. You may want to season to taste.


  • 1/2 teaspoon salt
  • 2 cup half and half
  • 1 can chicken broth
  • 2 tablespoon olive oil
  • 1 clove garlic
  • 1/2 small onion
  • 1/4 cup shredded Parmesan cheese
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon basil
  • 2 can tomatoes petite diced basil garlic onion


    1. Saute garlic and onion in oil. When tender add tomatoes, chicken broth, basil, salt and pepper. Simmer for 10 minutes.
    2. If desired you may blend this soup now. Otherwise, add half and half and cheese. Do not boil again but keep warm.
