Banana Nut Loaf

  • 1 teaspoon soda
  • 1/2 cup nuts
  • 1 teaspoon vanilla
  • 3 large bananas ripe
  • 1/4 teaspoon salt
  • 2 cup flour
  • 1/2 cup Crisco
  • 1 cup sugar
  • 2 large eggs


    1. Cream Crisco and sugar until fluffy. Add eggs, one at a time, beating well after each addition.
    2. Sift flour, soda, and salt onto waxed paper. Stir quickly into creamed mixture just until well blended; stir in mashed bananas, nuts and vanilla.
    3. Pour into greased loaf pan 9x5x3. Bake at 350 degrees for one hour, or until center is firm. Cool 5 minutes. Turn out onto wired rack and cool completely. Wrap in foil. Let stand 24 hours before serving.
