Microwave Chocolate Pudding

Ingredients

  • 1/4 cup cocoa powder
  • 2 1/2 cup milk whole
  • 1 cup flour self rising
  • 1 teaspoon baking powder
  • 1 cup butter
  • 1 cup brown sugar dark
  • 4 tablespoon milk
  • 4 count eggs
  • 2 tablespoon sugar
  • 1/4 cup instant vanilla pudding mix

Directions

    1. Grease a microwave safe bowl, 8-cup or larger. Set aside.
    2. Combine first three dry ingredients and sift. Add butter, brown sugar, 4 T. milk, and eggs beating well.
    3. Pour into greased bowl and cover with plastic wrap allowing extra space for the pudding to rise. Cook on high for 8-10 minutes, turning the bowl every 2-3 minutes. Loosen the plastic wrap and let stand for 5 minutes.
    4. Next we will make the topping. Combine the pudding mix and sugar in a microwave safe bowl. Add a small portion of the milk, whisking until smooth and blended. Add remaining milk and microwave on high for about 7-8 minutes, stirring occasionally to prevent lumps.
    5. Turn the pudding out onto a serving dish and cover with topping. It is important to let the pudding stand before removing from microwave safe bowl.
