Green Bean Amandine

  • 1 cup almonds sliced
  • 2 tablespoon lemon juice
  • 1 1/2 teaspoon salt
  • 4 tablespoon butter
  • 3 pound green beans fresh


    1. Clean and rinse green beans; set aside.
    2. In a skillet heat the almonds. Toss almonds as they heat turning frequently. When they start to brown add the butter, melting and slightly browning the butter. 2-3 minutes on medium heat. Pour into a dish and set aside.
    3. Place prepared green beans in a skillet with 1 cup of water, cover, and steam for 10 minutes. Remove lid after the 10 minutes and continue cooking until liquid is cooked away and beans are dry.
    4. Add lemon juice to the almond butter mixture and pour over green beans. Toss gently until coated. Serve.
