Chicken Florentine

This is great over pasta!


  • 1 medium chicken rotisserie style
  • 1 cup grated Parmesan
  • 1 teaspoon salt
  • 1 1/2 cup cream
  • 3/4 cup chicken broth
  • 1/4 teaspoon basil dried
  • 4 tablespoon butter
  • 1/4 teaspoon marjoram
  • 1 clove garlic
  • 4 tablespoon flour
  • 2 package spinach frozen chopped 10oz


    1. Remove meat from chicken bones. Set meat aside.
    2. Cook spinach according to package instructions. Set aside.
    3. In a large saucepan, melt 1 T. butter and add 1 T. flour. Add the garlic, marjoram, basil, and 2/3 cream. Stir until thickened. Salt to taste.
    4. Add spinach and pour into bottom of 9x13 glass baking dish. Add chicken.
    5. In a saucepan melt 3 T. butter, then add remaining 3 T. flour, add remaining cream and chicken stock. Cook until thick. Add salt and pepper to taste.
    6. Pour over chicken and top with Parmesan cheese. Bake in 400 degree oven for about 20 minutes or until bubbly.
