Italian-style Pepper Steak

Sirloin may be substituted for tenderloin in this.


  • 3/4 cup beef broth
  • 1/2 teaspoon oregano or basil
  • 1 can tomatoes diced Italian style
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 2 clove garlic
  • 3/4 pound beef tenderloin
  • 1/2 cup onion
  • 2 medium green peppers


    1. Quick fry peppers, onion, and garlic with 1 T. olive oil in hot skillet for about 3 minutes. Remove while still crisp.
    2. Add meat to skillet and cook for about 10 minutes, tossing frequently. Remove and set aside.
    3. Add beef broth and oregano and bring to a boil. Boil for about 3 minutes uncovered. Lower heat and add vegetables, meat, and tomatoes. Heat thoroughly and serve.
