Cheesy Chicken Enchilada Soup

  • 1 can beans pinto
  • 1 can soup cream of chicken
  • 2 can chicken breasts cooked
  • 1 can enchilada sauce
  • 1 bag tortilla chips if desired
  • 1 cup chicken broth
  • 1 can Rotel tomatoes mild hot for more spicey soup
  • 1/2 cup pepper red chopped
  • 1/2 cup green pepper chopped
  • 1 can nacho cheese soup
  • 1 can evaporated milk 12oz milk can be substituted


    1. Drain chicken and beans.
    2. Place all ingredients in large pot.
    3. Heat on medium until soup is hot, stirring occasionally.
    4. Serve with Tortilla chips.
